Petra's Chocolate Chip Cookies

This is a chocolate chip cookie recipe that I developed and tested from the ground up until I came up with the perfect, bakery style cookie.



Ready in: 1 hour

Serves: 14 cookies


Ingredients:

  • 3/4 cup unsalted butter (185g)

  • 3/4 cup packed brown sugar (150g)

  • 1/4 cup granulated sugar (50g)

  • 1 egg + 1 egg yolk, at room temperature

  • 1 tsp. vanilla extract

  • 1 tsp. espresso powder

  • 2 cups all-purpose flour (272g)

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

  • 1/2 cup semi-sweet chocolate (roughly chopped into chunks)

  • 1/2 cup semi-sweet chocolate chips

  • Flakey salt for topping


Process:

  1. Brown the butter in a small saucepan over medium heat, careful not to burn it. Allow the butter to cool to room temperature before moving on.

  2. Beat the browned butter and both sugars until well combined. Add the egg, egg yolk, vanilla extract, and espresso powder to the butter and sugar. Beat until well combined and the mixture is light.

  3. In a separate bowl, whisk together the flour, baking soda, and salt. Add the dry ingredient mixture to the wet ingredients and mix until just the last of the flour disappears.

  4. Fold in the chocolate chips and chopped chocolate.

  5. Scoop the cookie dough into 3 tbsp. balls and place them on a plate lined with parchment paper. Chill the cookie dough balls in the fridge for a minimum of 30 minutes. However, chilling overnight and up to 3 days will allow for maximum flavour development.

  6. Preheat the oven to 350 degrees F and transfer the chilled cookie dough to baking sheets lined with parchment paper. Place the cookie dough balls 2 inches apart.

  7. Bake for 12-15 minutes until golden brown around the edges and slightly soft to the touch. Top each cookie with a bit of flakey salt as soon as they come out of the oven. Allow the cookies to cool on the baking sheet for 5 minutes and then transfer to a wire rack to cool completely.


Notes:

Mix-in option (pictured): replace the chopped semi-sweet chocolate with 1/2 cup chopped walnuts.
