Coffee Cake Cookies

A classic cinnamon coffee cake but in cookie form, inspired by the Gilmore Girls tv show! These are soft cookies with a streusel topping centre. Recipe adapted from "thepalatablelife".
Ready in: 20 minutes
Serves: 9 big cookies
Ingredients:
Cinnamon Dough:
1/2 cup unsalted butter, softened
1/2 cup vegetable oil
1 cup packed, light brown sugar
1 large egg, at room temperature
1 tsp. vanilla extract
2 1/4 cups all purpose flour
2 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
Streusel Topping:
1/4 cup unsalted butter, softened
1/4 cup packed, light brown sugar
1/3 cup all purpose flour
1/2 tsp. ground cinnamon
1/8 tsp. salt
Glaze:
1/2 cup powdered sugar
1 tbsp. whole milk
1/4 tsp. vanilla extract
Process:
Preheat oven to 350 degrees F, and line a large baking sheet with parchment paper.
For the cookie dough: combine the softened butter, oil, and packed light brown sugar. Beat until smooth, add the egg and vanilla extract, and beat again. Add the remaining dough ingredients (flour, ground cinnamon, baking soda, baking powder, and salt) and mix until just combined.
For the streusel: combine all of the ingredients (butter, brown sugar, flour, cinnamon, and salt) in a small bowl and mix with a fork. The mixture should form a loose crumble. If it is too sticky, add another tablespoon of flour.
Using a large cookie scoop (3 tbsp.), scoop balls of dough onto the prepared baking sheet. Using the back of a teaspoon or your fingers, make an indent on the top of each ball of dough. Sprinkle a tablespoon or so of streusel into the indent atop each ball of dough.
Bake the cookies in the preheated oven for 10-12 minutes, they will be very soft but will harden slightly as they cool.
To make the glaze: combine the powdered sugar, milk, and vanilla in a small bowl with a fork, and whisk until smooth. Drizzle glaze on the cookies once they are completely cooled. Putting the glaze into a small ziplock bag and piping it on the cookies can make this easier.
