Walnut Banana Bread

A staple banana bread recipe that can be made with or without the walnuts. Other mix-ins can be added or substituted such as chocolate chips, dried fruits, or shredded coconut. Recipe adapted from "My Frugal Adventures".
Ready in: 75 minutes
Serves: 1 loaf
Ingredients:
2 cups all purpose flour (272g)
1 tsp. baking soda
1/4 tsp. salt
1 large egg, room temperature
1 cup + 2 tbsp. granulated sugar (217g)
1/2 cup neutral oil (ex. vegetable or canola oil)
2 tbsp. whole milk
1/2 tsp. vanilla extract
3 very ripe bananas, mashed (300g)
1/2 cup chopped walnuts (58g), or your choice of mix-in (optional)
Process:
Preheat oven to 325 degrees F.
Whisk together all purpose flour, baking soda, and salt in a small bowl. Set aside.
In an electric mixer fixed with the paddle attachment, beat together the egg, sugar, and oil until well combined.
Add the dry ingredients into the wet ingredients and stir until completely combined. At this point, the mixture will be thick and dry resembling a cookie dough.
Add in the milk, vanilla extract, and mashed bananas. Stir until well incorporated and a batter forms. Fold in chopped walnuts, or other mix-ins.
Grease and flour a standard loaf pan, and pour the batter into the pan.
Bake in the preheated oven for 50-75 minutes, checking the loaf regularly, until a knife inserted into the centre comes out clean.
