Strawberry Lemon Blondie Bars

These blondies are thick and chewy like a soft shortbread, bringing together the sweetness of strawberry and tangy lemon. Fresh diced strawberries in the batter and glaze create small jam-like pockets and give the bars a beautiful bright colour, perfect for the warm weather approaching us!

Ingredients:
Blondies:
1 cup unsalted butter, softened (228g)
3/4 cup granulated sugar (164g)
1 large egg, at room temperature
Juice of 2 lemons (1/4 cup)
2 1/4 cups all-purpose flour (306g)
1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. whole milk
1/2 tsp. vanilla extract
1 cup diced fresh strawberries (166g)
Zest of one lemon
Glaze:
1 cup powdered sugar (130g)
1 tbsp. strawberry puree (need about 3 large strawberries, further instructions below)
Juice of 1/2 a lemon
Process
Preheat the oven to 350 degrees F.
Line a 8x8 inch square baking pan with two pieces of parchment paper in a cross. This will help you lift the blondies out of the pan later.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a stand mixer, cream the butter and sugar until light and fluffy. Add in the egg and beat until fully incorporated.
Beat in the lemon juice, it won't incorporate completely at this point, but that's okay.
Add the dry ingredient mixture to the wet ingredients and mix until the last of the flour streaks disappear.
Add in the milk and vanilla extract and stir until fully combined.
Gently fold in the diced strawberries and lemon zest.
Transfer the mixture to the baking pan and spread it out evenly.
Bake for 30-35 minutes until the edges are just barely golden brown and the center is set. A toothpick inserted into the center will be moist, but not wet. Don't over-bake. Let cool completely in the pan.
For the glaze: clean and trim the strawberries, and puree them in a small food processor or blender. Strain the puree through a small strainer to get about 1 tbsp. of smooth puree.
Whisk together the powdered sugar, strawberry puree, and lemon juice until no lumps remain, and a smooth glaze is formed.
Spread the glaze over the cooled blondies and allow it to set before slicing.
